Beef ribs with pumpkin and eggplant

Ingredients

  • 500g of beef ribs
  • 250g pumpkin (hokkaido, butternut...)
  • 1 piece of eggplant
  • 1 tablespoon of lard
  • 2 teaspoons of ground red pepper
  • 1 clove of garlic
  • 1 onion
  • parsley and spring onion for garnish

Steps

  1. Cut the pumpkin and eggplant into thicker strips
  2. Marinate the ribs with ground paprika and lard and put them together with the pumpkin, eggplant, garlic and onion in a roasting pan and add a bit of water (half a cup).
  3. Bake in the oven for 6-10 hours at 150°C
  4. Sprinkle the ribs with parsley and spring onions before serving
