Beef ribs with pumpkin and eggplant

Ingredients
- 500g of beef ribs
- 250g pumpkin (hokkaido, butternut...)
- 1 piece of eggplant
- 1 tablespoon of lard
- 2 teaspoons of ground red pepper
- 1 clove of garlic
- 1 onion
- parsley and spring onion for garnish
Steps
- Cut the pumpkin and eggplant into thicker strips
- Marinate the ribs with ground paprika and lard and put them together with the pumpkin, eggplant, garlic and onion in a roasting pan and add a bit of water (half a cup).
- Bake in the oven for 6-10 hours at 150°C
- Sprinkle the ribs with parsley and spring onions before serving
